====== Pancakes ======

Inspired by [[https://rarecooking.com/2021/12/14/john-lockes-recipe-for-pancakes/|this]]. Makes for about ten 24cm pancakes.

What:
  * 250g butter
  * 5 eggs
  * 200g superfine flour
  * 200g Sour cream (liquid and superfat)
  * 200ml milk
  * Grated orange peel
  * Grated nutmeg and/or vanilla
  
How:

First, melt the butter. Set it aside.

Mix everything with a whisk or hand-held mixer until well combined, add melted butter halfway through.

Frying pan, heat up to 5/10 (until a drop of water skitters across the surface).

Pour approximately half a cup of batter into the center of the pan and spread by swirling the pan to create an 8-inch pancake. 4 minutes from each side.

Repeat until your batter is gone. Serve the pancakes immediately.
