Tomato lasagna

How:

Roast some onions in the pan. Use oil from sun dried tomatoes. Add chilli and sun dried tomatoes. Add sliced tomatoes and add some sugar. Sprinkle with Balsamic vinegar. Stir in pesto, tomato purée and sour cream. Reduce. Sprinkle with saffron (that's the good shit).

Mix eggs, ricotta and mascarpone in a bowl.

Fun part: making the pasta sandwich. Put some red stuff at the bottom of baking dish, layer with lasagna plates, spread with yellowy stuff, add some grated Parmesan and sliced Mozzarella. Repeat until baking dish is full, or you're out of lasagna plates.

Bake at 180° for 40+ minutes.
