====== Moroccan Chickpea Tagine ======

What:
  * Quinoa
  * Chickpeas or some other legume
  * Garlic
  * Red Onion or shallots
  * Cucumber
  * Green beans
  * Parsley
  * Lemon
  * Yogurt
  * Chilli or Harissa
  * Sun dried tomatoes
  * [[tamarind_chutney|Tamarind chutney]]

How:

Prepare legumes (soak overnight, boil, just make them soft and edible). The leftover water from boiling is called [[https://en.wikipedia.org/wiki/Aquafaba|aquafaba]]. It's a thing. 

Boil some quinoa in a pot like [[rice]] (rinse it, use less water).

Make tzatziki-like salad: Mix diced cucumber with black pepper, salt, yogurt and lemon juice.

Roast some onions in the pan. Use oil from sun dried tomatoes. Add garlic, parsley, harissa and sun dried tomatoes. Add chickpeas and green beans, stir in some tamarind chutney, cover.
