What:
- Some legumes (ideally red lentil)
 - Rice
 - Coriander or parsley or both
 - Red onion or shallots
 - yogurt
 - cucumber
 - garlic
 - lime
 - chilli
 - Sun dried tomatoes
 
How:
Prepare legumes (soak overnight, boil, just make them soft and edible). The leftover water from cooking is called aquafaba. It's a thing.
Roast some onions in the pot. Use oil from sun dried tomatoes. Add chopped coriander. Add chilli and sun dried tomatoes.
Tzatziki: Chop cucumber, mash garlic, mix with yogurt, add salt and pepper.
Mix together, sprinkle with lime juice and serve with tzatziki.
